Chili is sooo individual that when we serve it for our Christmas Day meal, we put out little bowls of condiment like with curry, so people can jazz it up for themselves. We put out things like chiles, cheese, onions, beans, corn kernels, tomatoes, sourcream, green onion, toasted pumpkin seeds, currants, and a little grated bittersweet chocolate! It's so much fun to "build your own" bowl of red (or green) we have both along with tamales.<BR/><BR/>I also adore white chili made with the navy or cannelini beans and chicken and green chilis (think it's from Beyond Parsley, Atlanta Junior League Cookbook). <BR/><BR/>My favorite though is to use the meat and gravy part separately. So sometimes I will strain out the meat and use it for different dishes like enchilada filling, rellenos filling, stuffed sopapilla filling, etc, then use the gravy over other things sans meat! <BR/><BR/>So, lol, now back to being the official self-appointed Texas spokeswoman...bwahahahahahaaha (being a legend in your own mind is soooo rewarding!) feel free to enjoy your chili as you like it, girl!
